Description
Chicory ( Cichorium intybus), a hardy perennial herb with purplish-blue flowers, is common in North America and Europe. Because it is naturally caffeine free, it has become a popular coffee substitute. Chicory leaves and flowers are often used in salads as well as for healing tonics in some parts of the world. Chicory grows wild in meadows and along roads and pathways and its vibrant blue flowers add a splash of colour to the landscape.
